This sharpening stone has two different faces with different levels of grains to allow you to get better results. You can always start by using the coarser side to do the initial sharpening, and then pass to the finer side to do the final sharpening. The grit of each side is described below:

– Grit 3000 (the gree part): this is the coarser part of the whetstone, but the grains are still finer than in most sharpening stones. Therefore, this part you can use it in two different ways. Firstly, if your knife has a highly rigid blade (for example, a blade made of carbon steel), you can start to sharpen it in this part before using the other grit of this whetstone.

However, if you have a knife with a blade that is not so rigid (with a hardness level not above 60 HRC), this grit can be used for giving the final sharpening blade after you have already used a stone with coarser grit below 1000.

– Grit 8000 (the white part): ultra fine grains that are ideal to provide an extraordinary razor sharp edge to your knife’s blade. Thanks to the fact that the grains in this part of the stone are so fine, the edge of the blade becomes thinner thus guaranteeing a superb cutting performance.

It is important to note that a stone with such fine grains needs to be used only with kitchen knives that have steel blades of a hardness level above 60 HRC. For dull blades, it is recommendable to use stones with coarser grit. Because the knives with more rigid blades usually remain sharp longer, this stone is usually used less frequently than other stones, but its usage will always depend on how often you use your knives.

The total dimensions of this whetstone are the following: 18 x 6 x 3 centimeters. It is sold with a blac silicone stand where you can put the stone to guarantee a safer usage. Why safer? Because by putting the stone in the stand, the silicone creates a nonslip effect that keeps your whestone still when you pass the blades across the stone’s surface.

Steps to use this whetstone:

– soak the stone in water about 15 minutes before usage.

– take out the stone of the water an place it on a flat, stable surface.

– place the superior half of the blade at 45° in relation to the stone’s surface.

– apply a slight pressure with your index and midle finger over the blade and adjust the angle to between 10 and 15°.

– slide the blade back and forth and you’ll see that fillings will start to come off the blade’s edge. This is normal as that is what proves that the blade is being sharpened. Add a bit of water to keep the stone wet if necessary. To check if the blade has reached the desired sharpness, you can test the blade by cutting a sheet of paper.

It is true that at the beginning it might seem a bit complicated to use a whetstone, but you’ll realize that with just a bit of practice you’ll be able to master its usage!
