– Grit 240 (the lower, pink part) has coarse grains that are ideal for restoring the edge of blund knives. This side should only be used with knives that haven’t been sharpened in a long time and require their edges to be redefined because these coarse grains are highly abrasive.

– Grit 1000 (the upper, white part) has finer grains that allow you to make the final sharpening of the blade. This side should be used only after you have used the other side of the stone.
